A luxury installation…

FredShaw & Co are proud to be associated with the refurbishment of the kitchen and restaurant of the 3 Acres Inn at Roydhouse, Shelley.

From the original enquiry of June 2024, through full design of the kitchen ventilation system, we liaised with the commercial kitchen designers and equipment suppliers, consultants and provided full calculations to comply with specifications and ultimately dealt with the client to ensure that their wishes and preferences were met.

The catering equipment threw challenges to the flexibility of the ventilation system of what would need to run at the different services throughout the day, from breakfast requirements, prep and full service.

Incoming air is filtered, tempered to temperature, controlled automatically to adjust air volume with extract requirement and distributed via perforated panels within the island canopy. When night temperatures fall below comfortable levels the system automatically provides low level heating to provide 24-hour comfort within the kitchen area.

The controls system is automatic, with manual over-ride to give chefs the choice of amount of ventilation they want at any given time, whilst the gas watch system monitors to ensure safe levels of combustion gases are not exceeded. The catering equipment had the additional complexity relating to safe condition monitoring due to the mix of propane gas supply, some electrical ovens and a BBQ oven making it essential to monitor both carbon monoxide and carbon dioxide.

Attenuation of roof mounted plant was essential so as not to disturb guests and local residents alike.

Our skills were put to further use when we were asked to provide powered chimney extract to ensure no smoke backdraught to the bar area on windy days along with altering the existing copper canopy hood to suite aesthetic requirements of the fireplace.

We were requested to provide and fit decorative brass panels to rear of seating, laser-cut brass radiator grilles, custom-built heavy-duty stainless-steel table, champagne/oyster insulated ice bar, icebox and bottle speed rail.

All work was completed to programme and the re-opening of the 3 Acres Inn & restaurant was in May of this year; a local project that was a pleasure to be involved with throughout.
